Ingredients
4 chicken thighs
1 cup wine vinegar
1 cup white wine
2 onions
3 cloves garlic
2 teaspoon mustard seed
1 cup chicken broth
4 leaves lovage
2 tablespoon olive oil
salt and pepper to taste

1. Heat the olive oil in a pot over medium heat. Season the chicken thighs with salt and pepper, and sear until golden brown on each side.
2. Remove the chicken and set it aside. In the same pot, saute the onions and garlic until translucent.
3. Stir in the mustard seeds and let them crackle.
4. Deglaze the pot with wine vinegar and white wine.
5. Add the chicken thighs back to the pan, pour in the chicken broth and bring it to a simmer.
