Ingredients
2 cups rice
4 cups water
2 tbsp butter
3 cloves garlic
4 tomatoes
2 habanero peppers
salt

lemon juice
2 tbsp olive oil

Instructions

1. Rinse rice under cold water until the water runs clear. Bring 4 cups of water to a boil. Add rice and a pinch of salt, cover and reduce heat to low. Simmer for 18 minutes or until water is absorbed.
2. Mince the garlic. In a separate pan, melt butter and sauté the garlic until golden.
3. Once rice is cooked, fluff it with a fork and mix in the garlic butter.
4. In a bowl, chop the tomatoes and habanero peppers, then toss with olive oil, a splash of lemon juice, salt, and pepper to create a salsa.
5. Serve the garlic butter rice topped with the fresh tomato habanero salsa.
