Ingredients
4 NY Strip Steaks
1 Onion, sliced
2 Carrots, sliced
2 tbsp Olive oil
4 tbsp Green peppercorns
1 cup Red wine
2 tbsp Butter
Salt and pepper to taste

1. Season the steaks with salt and pepper on both sides.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add the steaks and cook to desired doneness, 4-5 minutes per side for medium-rare.
4. Remove the steaks and let them rest.
5. In the same skillet, add the onions and carrots, and sauté until softened, about 5 minutes.
6. Add the red wine and green peppercorns, and cook until the sauce is reduced by half.
7. Stir in the butter until melted and the sauce is glossy.
8. Slice the steaks against the grain and serve with the red wine sauce.
