4 sweet potatoes, peeled and cubed
1 head radicchio, chopped
4 tablespoons olive oil
6 cups water
1 teaspoon salt

In a large pot, heat 2 tablespoons of olive oil over medium heat.
Add the sweet potatoes and cook for 10 minutes, stirring occasionally until they start to soften.
Add chopped radicchio to the pot and cook for another 5 minutes until it wilts.
Add water, salt, pepper, and garlic powder to the pot and bring to a boil.
Reduce heat and let it simmer for 25 minutes until the sweet potatoes are tender.
Remove from heat and use an immersion blender to blend the soup until smooth.
Drizzle the remaining olive oil into the soup and stir to incorporate.
Serve hot.
