Quinoa Vegetable Pilaf

Ingredients
1 cup Quinoa
2 cups water
2 tablespoons olive oil
1 medium Onion, diced
1 cup Celery, sliced
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon oregano
1 tablespoon lemon juice
Instructions

1. Rinse the quinoa under cold water.
2. Heat olive oil in a saucepan over medium heat.
3. Add diced onion and celery, and cook until softened, about 5 minutes.
4. Stir in the garlic powder, oregano, salt, and pepper.
5. Add the quinoa and water to the saucepan, bring to a boil.
6. Reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed.
7. Turn off heat and let sit for 5 minutes.
8. Fluff with a fork and stir in the lemon juice before serving.
