Rustic Anchovy and Cabbage Pasta

4 servings pasta
1/2 head cabbage, chopped
1 tin anchovies
2 cloves garlic, minced
4 tablespoons olive oil
1 teaspoon red pepper flakes
Salt and pepper to taste
1 teaspoon oregano

1. Bring a large pot of salted water to boil and cook pasta according to package instructions until al dente.
2. While the pasta is cooking, heat olive oil over medium heat in a large pan.
3. Add the minced garlic and red pepper flakes, cooking until fragrant, about 1 minute.
4. Add the anchovies and mash them with a fork until they dissolve into the oil.
5. Stir in the chopped cabbage and cook until tender, about 6-8 minutes.
6. Once pasta is cooked, reserve 1 cup of the pasta water and drain the rest.
7. Add the drained pasta to the pan with cabbage and anchovies, tossing to combine. Add reserved pasta water as needed to make a light sauce.
8. Season with oregano, salt, and pepper to taste.
9. Serve hot.
