Ingredients
2 eggs
1 cup milk
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sugar
1 medium Onion, finely chopped
1 cup Celery, finely chopped
3 tablespoons butter

1. In a large bowl, whisk together eggs and milk.
2. Sift in flour, baking powder, salt, pepper, and sugar. Stir until just combined.
3. Fold in the chopped onion and celery.
4. Heat a skillet over medium heat and melt 1 tablespoon of butter.
5. Pour 1/4 cup of batter per pancake onto the skillet.
6. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
7. Repeat with remaining batter, adding more butter to the skillet as needed.
8. Serve hot with a dollop of mayonnaise or ketchup, if desired.
