Stir-Fried Rice with Broccoli and Peanut Sauce

2 cups Rice
4 cups Water
2 heads Broccoli, chopped
4 tbsp Olive oil
2 tbsp Soy sauce
1 tbsp Peanut butter
1 clove Garlic, minced
Salt and pepper to taste
1 Lime, juiced

1. Cook rice in a pot with 4 cups of water until fluffy, about 18 minutes.
2. While the rice is cooking, steam broccoli until tender, about 5-7 minutes.
3. In a small bowl, mix peanut butter, soy sauce, lime juice, and a pinch of garlic powder to create the peanut sauce.
4. Heat olive oil in a large pan over medium heat. Add the cooked rice and broccoli, then stir in the peanut sauce. Cook for 5 minutes, stirring occasionally.
5. Season with salt, pepper, and additional lime juice to taste. Serve hot.
