Broccoli Cheddar Soup

Ingredients
2 heads Broccoli, chopped
4 cups Milk
2 tbsp Butter
2 tbsp Flour
4 cups Water
1/2 cup Cheddar cheese, shredded
Salt and pepper to taste

1. In a large pot, melt butter over medium heat. Add flour, stirring to create a roux.
2. Gradually whisk in milk until the mixture is smooth. Bring to a simmer, then reduce heat to low.
3. Add broccoli and water to the pot. Cook until broccoli is tender, about 20 minutes.
4. Using an immersion blender, blend the soup until smooth. Alternatively, you can blend the soup in batches using a regular blender.
5. Stir in shredded cheddar until it's melted and incorporated. Season with salt and pepper. Serve hot.
