Ingredients
2 cups Rice
1 head Broccoli, florets
3 tbsp Olive oil
4 cups Water
1 Lime, zest and juice
Salt and pepper to taste

1. Rinse the rice under cold water until the water runs clear to remove excess starch.
2. Heat olive oil in a pot and add the rice, stirring to coat the grains.
3. Add the water and lime zest to the pot, bring to a boil, then reduce to a simmer, and cover the pot.
4. Allow rice to cook for 18 minutes, or until the liquid is fully absorbed and rice is tender.
5. While the rice cooks, steam broccoli until it is bright green and just tender, about 5-7 minutes.
6. Once the rice is done, fluff it with a fork and mix in the steamed broccoli. Drizzle with lime juice, and season with salt and pepper to taste.
