Ingredients
4 skin-on chicken thighs
1 tsp coriander
1 tsp turmeric
1 tsp cumin
1 cup yogurt
2 cups rice
1 bunch scallions
2 lemons, juiced
1 tsp ginger, grated
2 cloves garlic, crushed
2 tbsp olive oil
salt to taste

1. In a bowl, combine the yogurt, coriander, turmeric, cumin, ginger, garlic, lemon juice, salt, and pepper. Add the chicken thighs and marinate for at least 2 hours.
2. Preheat your oven to 400 degrees F.
3. Spread the rice evenly on a sheet pan. Drizzle with olive oil and sprinkle with salt and pepper. Arrange the marinated chicken thighs on top.
4. Bake for 30-35 minutes or until the chicken is cooked and the rice is crispy. During the last 5 minutes of cooking, add chopped scallions to the pan.
