1 cup cornmeal

2 eggs

1. In a mixing bowl, combine grated carrots, cornmeal, baking powder, sugar, salt, pepper, and garlic powder.
2. Beat eggs and milk together and add to the carrot mixture, stirring until well combined.

4. Drop spoonfuls of the batter into the hot oil and flatten to form small fritters.
