4 chicken thighs
2 cups pearl onions, peeled
2 cups carrots, sliced
3 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon red pepper flakes
4 cloves garlic, minced

1. Preheat your oven to 400°F (200°C).
2. Season the chicken thighs with salt, pepper, oregano, and red pepper flakes.
3. In a large bowl, toss the pearl onions and carrots with olive oil and minced garlic.
4. Arrange the chicken thighs on a baking sheet, and surround with the seasoned onions and carrots.
5. Roast in the oven for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.
6. Turn the vegetables halfway through the cooking time to ensure even roasting.
7. Remove from oven and let it rest for a few minutes before serving.
