4 large potatoes, peeled and diced
2 tablespoons olive oil
1 teaspoon garam masala
Salt to taste
Pepper to taste
1 teaspoon oregano
1 clove garlic, minced

1. Preheat the oven to 425°F (220°C).
2. In a large bowl, toss the diced potatoes with olive oil, garam masala, salt, pepper, oregano, and minced garlic until all the pieces are well coated.
3. Spread the potatoes in a single layer on a baking sheet.
4. Bake for about 25 to 30 minutes, or until the potatoes are golden brown and crisp, stirring them halfway through.
5. Remove from oven and serve hot.
