Spinach and Pork Toasties

Ingredients
2 pork chops, thinly sliced
2 tablespoons olive oil
Salt to taste
Pepper to taste
4 slices of bread
1 cup spinach, roughly chopped
2 garlic cloves, minced
4 tablespoons mayonnaise
1 teaspoon hot sauce

1. Season the thinly sliced pork chops with salt and pepper.
2. Heat olive oil in a pan over medium heat and cook pork slices for 4-5 minutes per side, or until cooked through.
3. Remove pork from the pan and set aside.
4. In the same pan, add spinach and minced garlic, sautéing for 2-3 minutes until spinach is wilted.
5. In a bowl, combine mayonnaise with hot sauce.
6. Toast the bread slices.
7. Spread the spicy mayonnaise on each slice of toasted bread.
8. Assemble the sandwiches with the cooked pork and sautéed spinach.
9. Serve immediately.
