4 boneless chicken thighs
2 cups cornmeal

1. Preheat oven to 375°F (190°C).
2. In a bowl, mix together cornmeal, garlic, oregano, salt, and pepper.
3. In another bowl, combine lemon juice and olive oil.
4. Dip each chicken thigh first in the lemon oil mixture, then coat evenly with the seasoned cornmeal.
5. Place coated chicken thighs on a baking tray.
6. Bake for 25-30 minutes or until crispy and fully cooked (internal temperature should reach 165°F (74°C)).
