4 boneless chicken thighs
1 cup rice
2 cups water
4 tablespoons vegetable oil
1 clove garlic, minced
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon red pepper

1. Rinse the rice under cold water until the water runs clear.
2. In a pot, combine rinsed rice, 2 cups of water, and minced garlic. Bring to a boil.
3. Reduce heat to low, cover, and simmer for 18-20 minutes or until water is absorbed.
4. While rice is cooking, season chicken thighs with salt, pepper, garlic powder, and red pepper.
5. In a skillet, heat vegetable oil over medium heat and cook chicken thighs for about 5-7 minutes per side or until they reach an internal temperature of 165°F (74°C).
6. Fluff the rice with a fork and serve with the cooked chicken thighs.
