Spicy Bacon Fried Rice

Ingredients
2 cups of cooked rice, chilled
4 strips of Bacon, chopped
1/2 head of Cabbage, shredded
3 Pepperoncini, sliced
2 tablespoons of vegetable oil
1 tablespoon of soy sauce
2 eggs, beaten
1 teaspoon of garlic powder
Salt and red pepper flakes to taste

1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
2. Add the eggs and scramble until just set. Remove and set aside.
3. In the same skillet, add the remaining oil and the chopped bacon. Cook until the bacon is crispy.
4. Add the garlic powder and shredded cabbage, and sauté until the cabbage is softened.
5. Stir in the sliced pepperoncini and cooked rice, breaking up any clumps.
6. Add the soy sauce, salt, and red pepper flakes. Stir-fry for another minute to combine the flavors.
7. Return the scrambled eggs to the skillet and mix everything together.
8. Serve immediately.
