leftover chicken thighs (amount depending on what's available)
1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup basil, chopped
1 tomato, diced
2 cups pasta
salt and pepper to taste
1/4 cup grated cheese
Instructions

1. Cook the pasta according to the package instructions, then drain and set aside.
2. Heat olive oil in a large pan over medium heat.
3. Add the minced garlic and sauté for 1 minute until fragrant.
4. Cut the leftover chicken thighs into bite-sized pieces and add them to the pan. Cook until heated through.
5. Add the diced tomato and chopped basil to the pan, and cook for another 2 minutes.
6. Season with salt and pepper.
7. Toss the cooked pasta into the pan with the chicken and vegetables until well combined.
8. Remove from heat and sprinkle with grated cheese before serving.
