Ingredients
leftover chicken thighs (amount depending on what's available)
4 small flour tortillas
1/2 cup cheese, shredded
1 tablespoon vegetable oil
1/2 teaspoon garlic powder
salt and pepper to taste

Instructions

1. Shred the leftover chicken thighs into small pieces.
2. Heat a large skillet over medium-high heat and brush with vegetable oil.
3. Lay a tortilla flat on the skillet and sprinkle half of it with shredded chicken, garlic powder, salt, and pepper.
4. Add a layer of shredded cheese on top of the chicken.
5. Fold the tortilla in half over the cheese and chicken to form a half-circle and press down lightly with a spatula.
6. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
7. Repeat with the remaining tortillas.
8. Cut the quesadillas into wedges and serve.
