Ingredients
leftover chicken thighs (amount depending on what's available)
1 cup rice
1 tablespoon olive oil
2 cloves garlic, minced
1 tomato, diced
1/2 cup basil, chopped
2 1/4 cups water
salt and pepper to taste
Instructions

1. Rinse the rice under cold water until the water runs clear, then drain.
2. Heat olive oil in a saucepan over medium heat.
3. Add the minced garlic and sauté until fragrant.
4. Stir in the diced tomato and cook for 2 minutes.
5. Add the rice to the saucepan and stir to coat with the tomato and garlic mixture.
6. Pour in water, season with salt and pepper, and bring to a boil.
7. Reduce heat to low, cover, and simmer for 18 minutes or until the rice is cooked and the water is absorbed.
8. While the rice is cooking, shred or chop the leftover chicken thighs and heat them through.
9. Once the rice is done, fluff it with a fork and gently stir in the chicken and chopped basil.
10. Serve the rice with additional fresh basil on top if desired.
