1. Preheat the oven to 400°F (200°C).
2. Peel the carrots and cut them into sticks.
3. Toss the carrots with olive oil, salt, and pepper, and spread them on a baking sheet.
4. Roast in the oven for 20-25 minutes, until tender and slightly caramelized.
5. While the carrots are roasting, whisk together tahini, lemon juice, water, and honey in a bowl until smooth.
6. Remove the carrots from the oven and let them cool for a few minutes.
7. Drizzle the tahini sauce over the carrots and sprinkle with pomegranate seeds before serving.
