1 cup rice
2 cups water
1/2 teaspoon salt
2 tablespoons vegetable oil
1/2 cup pumpkin seeds
1/4 teaspoon red pepper
1/4 teaspoon garlic powder
1 tablespoon cilantro, chopped
Instructions

1. Rinse the rice under cold water until the water runs clear.
2. In a pot, bring water to a boil and add salt and rice.
3. Reduce heat to low, cover, and simmer for 18 minutes.
4. While rice is cooking, heat vegetable oil in a pan over medium heat.
5. Add pumpkin seeds and toast until they start to pop, about 3-5 minutes.
6. Stir in the red pepper and garlic powder, then remove from heat.
7. Once rice is done, let it stand for 5 minutes, then fluff with a fork.
8. Mix in the spiced pumpkin seeds and garnish with chopped cilantro.
9. Serve immediately or at room temperature.
