Ingredients
2 cups rice
4 cups water
4 tbsp olive oil
4 cloves garlic
2 tbsp lemon juice
1 avocado
salt
pepper

1. Rinse the rice under cold water until the water runs clear.
2. In a saucepan, heat 2 tablespoons of olive oil over medium heat.
3. Add minced garlic to the oil and sauté until fragrant.
4. Add the rice and water to the saucepan, bring to a boil, then reduce heat to a simmer.
5. Cover and cook the rice for 18-20 minutes or until all the water is absorbed.
6. Remove from heat and let it stand, covered, for 5 minutes.
7. Fluff the rice with a fork and stir in the lemon juice, remaining olive oil, salt, and pepper.
8. Serve the rice topped with sliced avocado.
