1 head broccoli, cut into florets
1/4 cup Monterey Jack cheese, shredded
2 tablespoons olive oil
2 tablespoons parsley, chopped
1 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, minced
Instructions

1. Preheat oven to 400°F (200°C).
2. Beat eggs with oregano, salt, pepper, and half of the chopped parsley.
3. Heat olive oil in an oven-safe skillet over medium heat and sauté garlic until fragrant.
4. Add broccoli florets and cook for 3-4 minutes until bright green and slightly tender.
5. Pour egg mixture over broccoli and sprinkle with shredded Monterey Jack cheese.
6. Cook on the stovetop for 3-5 minutes until the edges start to set.
7. Transfer skillet to oven and bake for 10-12 minutes until eggs are set.
8. Garnish with the remaining chopped parsley and serve.
