Ingredients
1 winter squash
2 tbsp maple syrup
4 pork jowls
2 tbsp olive oil
salt
pepper
1 tsp red pepper flakes

1. Preheat oven to 375°F (190°C).
2. Peel the winter squash and cut into 1-inch cubes. Toss with maple syrup, 1 tbsp olive oil, salt, and pepper.
3. Arrange the squash on a baking sheet and roast for 25 minutes or until tender and caramelized, stirring halfway.
4. While squash is roasting, heat 1 tbsp of olive oil in a skillet over medium-high heat.
5. Add the pork jowls and cook until crispy, about 5 minutes per side.
6. Sprinkle red pepper flakes over pork jowls and sauté for another minute.
7. Serve the winter squash topped with crispy pork jowls.
