Ingredients
1 kobocha squash
300g pasta
100ml cream
2 cloves garlic
Salt and pepper to taste
2 tablespoons olive oil
50g grated Parmesan cheese (optional, if available)

1. Preheat oven to 400°F (200°C).
2. Cut the kobocha squash into cubes and toss with 1 tablespoon olive oil, salt, and pepper.
3. Roast the squash for 25-30 minutes until tender.
4. While the squash is roasting, boil pasta according to package instructions until al dente.
5. Chop garlic and sauté in a pan with remaining olive oil until fragrant.
6. Add the roasted squash and cream to the pan, and mash squash to create a creamy sauce.
7. Drain pasta and add to the sauce, toss to combine.
8. Serve hot, optionally sprinkle with grated Parmesan cheese.
