1 bulb garlic
2 tablespoons olive oil
2 cups cream
4 cups water
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon flour
1 tablespoon butter

Preheat oven to 400°F (200°C).
Cut the top off the garlic bulb to expose cloves, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30-35 minutes.
In a pot, melt butter over medium heat, whisk in flour and cook for about 1 minute to create a roux.
Gradually whisk in 1 cup of water, ensuring no lumps form.
Squeeze the roasted garlic out of their skins and add to the pot.
Add the remaining water, bring to boil and then lower to a simmer for 15 minutes.
Pour in the cream, add salt and pepper, and heat through for another 5 minutes, taking care not to boil.
Use an immersion blender to blend until smooth.
Serve hot, garnished with a drizzle of olive oil and cracked pepper.
