200g rice
4 artichokes, trimmed and quartered
2 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
1 tsp dried oregano
1 tsp lemon juice
Salt and pepper to taste

1. Rinse rice under cold water until water runs clear.
2. In a sauté pan with a fitted lid, heat olive oil over medium heat.
3. Add diced onions and minced garlic, and sauté until onions are translucent.
4. Stir in the rice and cook for 2 minutes to slightly toast the grains.
5. Add 400ml of water, the prepared artichokes, oregano, lemon juice, salt, and pepper to the pan. Bring to a boil.
6. Reduce the heat to low, cover, and simmer for 20 minutes, or until rice is tender and artichokes are cooked through.
7. Fluff the rice with a fork before serving.
