Veggie Fried Rice with Applesauce

Ingredients
3 cups rice, cooked and cooled
1 Squash, cubed
1 bunch Asparagus, chopped
2 eggs
2 tbsp soy sauce
1 tbsp vegetable oil
Salt
Pepper
1/2 cup applesauce (for serving)
Instructions

1. Heat oil in a large skillet or wok over medium-high heat.
2. Add the chopped asparagus and cubed squash. Stir-fry until they are just tender.
3. Push the veggies to the side of the skillet and scramble the eggs on the other side.
4. Add the cooked rice and soy sauce. Stir-fry everything together for 5-7 minutes.
5. Season with salt and pepper to taste.
6. Serve the fried rice with a side of applesauce.
