Ingredients
1 cup quinoa
2 tablespoons olive oil
2 medium garlic cloves, minced
1 teaspoon soy sauce
2 eggs, beaten
Salt and pepper to taste

1. Prepare quinoa according to package instructions and set aside.
2. Heat olive oil in a large pan over medium heat.
3. Add minced garlic to the pan, and sauté until fragrant, about 1 minute.
4. Push the garlic to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until fully cooked.
5. Once eggs are scrambled, mix them with the garlic.
6. Add in cooked quinoa and soy sauce.
7. Stir everything together and fry for another 5 minutes.
8. Season with salt and pepper to taste.
9. Serve hot.
