2 cups leftover mashed potatoes
1 egg
1/4 cup flour
1/2 teaspoon garlic powder
1/2 teaspoon salt

1/2 cup breadcrumbs

1. In a large bowl, mix the mashed potatoes, egg, flour, garlic powder, salt, and pepper until well combined.
2. Shape the potato mixture into small balls.
3. Place breadcrumbs in a shallow dish and roll the potato balls in breadcrumbs until evenly coated.
4. Heat oil in a deep fryer or large pot to 375°F (190°C).
5. Fry the potato balls in batches, being careful not to overcrowd the pot, until golden brown, about 2-3 minutes.
6. Drain on paper towels and serve hot.
